As long as the calipers come with the mounting brackets that all you need, the mounting brackets accommodate the larger discs, I converted my 1.9 front brakes to 2.8 discs and calipers.

Do I need to replace the steel guards at the back, are the 3.0 larger diameter?

RealOEM shows the same guard across all models.
Yep, just used the same guards. The job is not too difficult, have a look at your brake hoses before you start, It is a good time to change if yours are showing signs of ageing.
The 3 litre/ E46 brakes are 300 mm diameter, whic is onlyan increase in radius off 6mm, so the shields should be fine. Tt replace them requires that the hubs be removed, which generally damages the wheel bearings, so it is certainly not worth bothering to change the shields.
I changed to the 3.0 litre (300mm) brakes from the standard 2.0 (286mm), calipers, shields and pads were all the same so I only had to change the carriers and the discs themselves.
You may need to change the calipers too as I think they are different between the 6cyl and 4cyl
