Early model roofs

Do the early model Z's have a single layer roof eg, no internal 'headlining'?

Yes, I'm not sure if the single lining roof was all early models, but the Facelift models all have a lining inside as well.

Pre-facelift cars had no roof-lining. It was added at the facelift, so all facelift cars got it. It is possible to retrofit it, as BMW sold a retrofit kit, but I am not sure how the kit differs from the facelift roof, or whether there is any drilling of the frame involved. The roof itself is the same.
