The minimum / maximum tyre width for 7.5 rims is 215 to 235.

The Alpina RLE had 17 inch wheels with 235/40/17 tyres ... however, they may have been 8 inch wide, not sure

The larger and wider 17 inch diameter wheels / tyres will need a lower side wall profile compared to the standard 16 inch 225/45/16 to keep the speedo reading reasonably accurate. There are websites where you can input the tyre size and determine the accuracy of the speedometer reading.

Which tyres ? I recently fitted new 225/45/17 Yokohama Advan Neova AD08 RS on a Lotus. Initial impressions are very good indeed, however the old AO48 tyres were the original xx year old with the texture and grip of Bakelite. The AO48 semi slick has been replaced by a new AO52 in limited sizes with a life of c.3k miles and three times the price of the AD08RS.

The AD08RS is also available in standard Z1 225/45/16 and I believe used by a number of Z1 owners.

The attached link will give details and available sizes.

The wheel I am looking at can be either 7.5 or 8.5

Thinking the 8.5 with 245/35/17 but then the speed will drop a little more,

or the 245/40/17 on 8.5 which will bring the actual speed closer to the gauge speed..
